WHere is an easy take on a drink from the seasonal cocktail list. It's a batch pre-mixed which is packed full of flavours of a festive period, which makes it ideal for your celebration. Save the extra citrus syrup for morning drinks, sweets, or for another batch of bikinis.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Combine all the items into a saucepan, bring to a simmer, agitating so the sugar melts. Then, turn off the heat and leave to cool down completely. Pour into an sterilised bottle, close it and store in the refrigerator, it will last for around four weeks.
For the Cocktail Base: Pour the specified spirits and syrup in a large bottle, let it rest for one hour, then filter it best through a fine cloth, so it's perfectly clear.
For serving: Add 85ml from the cocktail base to a stirring glass containing ice, and agitate gently for about 60 seconds to cool it down. Strain into an cold coupe glass or a similar vessel, top with some cranberries and finish using a light spray of mandarin oil over the drink.
